Low Carb Egg Drop Soup

Winter is a time for hearty comfort foods – and there is nothing better than a tasty homemade soup, made with fresh whole ingredients that can be found right in your fridge and pantry


1 package of frozen mirepoix


2 cartons of organic chicken broth

1 cup of raw organic split peas

2 raw parsnips – peeled and cubed

1 medium sweet potato – peeled and cubed

2 organic eggs

1/2 cup of chopped fresh dill

Spices to taste

Greek yogurt for garnish



Heat EVOO in a large pot or dutch oven on high-medium heat, sauté mirepoix for 3-5 minutes, add chicken broth and let it come to a boil, add spices to taste

Rinse split peas and add to boiling pot, bring the heat down and simmer for 20 minutes.

Add parsnips and sweet potato cubes and bring to boil, then turn the heat back down to low and simmer for another 20 minutes.

Scramble eggs – slowly add to the pot while stirring

Turn off heat, add dill and stir.

Serve as is or add a dollop of Greek Yogurt for garnish
